I think they upped the rating because recent episodes have had more adult humor/content in them. I think in particular of the innuendos in "That's No Lady!" and some of the double entendres, like the "genius showing" part.
Somehow, I don't think the show would have gotten a Y7 during Hillenburg's tenure.
