I'm gonna have to guess, probably episodes 49a and 49b (Krab Borg; Rock-A-Bye-Bivalve) were the last episodes to undergo production in the summer of 2001, why I guess,because when I watch the end credits of each episode from S3 each and every one of them until about episode 53 is copyrighted in 2001, every episode in between that and Fear of a Krabby Patty were produced in 2002 to make accommodations for the original movie. Its also a plain coincidence that there was a Blimp crash scene in the S2 episode Band Geeks, which aired 4 days before the tragedy, the episode itself, I read somewhere that it was completed in November 2000. Plus, the deleted scene in Just One Bite was also a coincidence, even though it aired on October 5, 2001, it probably finished production months earlier, given why they kept that scene in its original airing. I respect those who had lost love ones on 9/11, and I'm just having a weird curiosity on which was the last episode produced before the catastrophic collision.

it takes 9 months to produce a whole episode, so lets look at the episodes production, and at the first one produced aftr 9/11
 
Not really related, but... Just, while the towers were falling, my favorite dog were beeing born... She died already... So that date for me is kinda happy and sad.
